Tempt My Tummy Tuesday



I love to eat what is fresh and in season a lot of the time. I do this for a side all year long.  This is great in foil on the grill or on top of the campfire. In the winter I will do it right in the oven. The boys don't like much besides chicken nuggets and goldfish so I will make the entire plate for me.  Being a diabetic this is a great no carbs meal for me.

Ingredients:

  • 2 lb fresh asparagus ends trimmed
  • 12 slices bacon, uncooked
  • ½ cup brown sugar
  • ½ cup butter
  • 1 Tbsp soy sauce (optional) I use olive oil in place of this. 
  • ½ tsp garlic garlic (from Tastefully simple)
  • ¼ tsp freshly ground pepper
  • ¼ sea salt

Instructions:

  • Preheat oven to 400ºF.
  • Wrap one piece of bacon around 3 to 4 asparagus spears. Place in shallow baking dish. Repeat with remaining asparagus and bacon. (You can use foil for grill or campfire) 
  • In a small saucepan over medium-high heat, combine brown sugar, butter, soy sauce, garlic powder and pepper. Bring to a boil. Reduce heat to medium-low and stir until sugar is dissolved. Pour mixture over asparagus bundles.
  • Bake 25 to 30 minutes, until spears begin to wilt and bacon is cooked.
