I love to eat what is fresh and in season a lot of the time. I do this for a side all year long. This is great in foil on the grill or on top of the campfire. In the winter I will do it right in the oven. The boys don't like much besides chicken nuggets and goldfish so I will make the entire plate for me. Being a diabetic this is a great no carbs meal for me.
I hope you enjoy this! If you do make it please post a comment and a picture!
Ingredients:
- 2 lb fresh asparagus ends trimmed
- 12 slices bacon, uncooked
- ½ cup brown sugar
- ½ cup butter
- 1 Tbsp soy sauce (optional) I use olive oil in place of this.
- ½ tsp garlic garlic (from Tastefully simple)
- ¼ tsp freshly ground pepper
- ¼ sea salt
Instructions:
- Preheat oven to 400ºF.
- Wrap one piece of bacon around 3 to 4 asparagus spears. Place in shallow baking dish. Repeat with remaining asparagus and bacon. (You can use foil for grill or campfire)
- In a small saucepan over medium-high heat, combine brown sugar, butter, soy sauce, garlic powder and pepper. Bring to a boil. Reduce heat to medium-low and stir until sugar is dissolved. Pour mixture over asparagus bundles.
- Bake 25 to 30 minutes, until spears begin to wilt and bacon is cooked.
